Salmon Cakes

My mother used to make these when I was younger and I loved them.  Granted, I ate them with ketchup which may seem weird but they were soooo good.  The idea of having them while camping hit me some years later and they still are soooo good.

Salmon Cakes


  • 2 cups bread crumbs
  • 2 eggs, beaten
  • 1 medium onion diced
  • 1/4 teaspoon ground black pepper
  • 1 (14.75 ounce) can salmon, drained
  • 2 tablespoons butter or margarine


  1. Mix bread crumbs, pepper, and onion in medium sized bowl
  2. Add egg and stir until all ingredients are moist
  3. Add salmon and mix thoroughly
  4. Form into 8 roughly equal sized balls and flatten into patties 1/4 to 1/2 inch thick
  5. Heat cast iron skillet over grill or camp fire grate and melt butter or margarine in skillet
  6. Cook patties until bottom is golden brown, turn (Approx. 4 Minutes per side)
  7. Add butter to skillet between sides if necessary
